Creamy Mashed Cauliflower

Are you craving a big pile of mashed potatoes but don’t need all those carbs? Want a healthier, less starch-ridden substitute?  This is one of our favorite side dishes. Even if you’re a picky eater… please – just give it a shot. I bet you won’t be disappointed! It’s creamy, garlic-y, and all-around comforting food. Bonus – It’s also healthy! What’s there not to like?

Serves 2 / Cook time: 10 minutes


  • 1 large head cauliflower
  • 2 cloves garlic
  • ¼ cup milk
  • 1 tablespoon butter
  • 2 tablespoons sour cream
  • Fresh basil, chopped
  • Salt & pepper


–  Chop up the cauliflower into florets. There are 2 ways to do this – the quickest route is to nuke your cauliflower for about 10 minutes until tender. If you’re against microwaves for whatever reason, you can also choose to boil it for 8-10 minutes.

–  While they are still hot, add the cauliflower florets and remaining ingredients to your food processor and blend until creamy. Season to your liking with salt and pepper.
We added in fresh basil because we had extra lying around – experiment by adding other herbs like rosemary, chives, etc!
