Pop-tails: The Ultimate Summer Treat

What is there not to love about Boozy Popsicles (AKA “poptails”)? It is dessert and a drink combined in one. Plus it’s on a stick! I had wanted to make some of these forever and I thought it would be fun to experiment with some of the stuff I already had around the house. The 90+ degree temps lately have been making them all that much more appetizing….

Here are a couple of recipes I came up with!

Directions for all: mix all ingredients and pour into deep ice cube trays (or popsicle molds if you have them). Wait until they are half frozen and stick a toothpick/popsicle stick in each one. Place them back in the freezer and allow to set.

Note: don’t overdo it on the booze or they will not freeze!

Banana Cream Pie Poptails (makes 2 trays)

One 5.1 oz package instant banana pudding mix

3 cups skim milk

¼ cup Whipped cream vodka

1/3 cup Baileys

Mint Chocolate Pops (makes 1 tray)

1/3 cup Green crème de menthe

¼  cup Kahlua

1 ¼ cup skim Milk

¼ cup Hershey’s chocolate syrup

Tropic-sicles (makes 1 tray)

1/3 cup Peach schnapps

1 cup Pineapple juice

1/3 cup Blue curacao

1/3 cup 7-up

Mint Chocolate Pops & Tropic-sicles

The Banana Cream Pie poptails were my favorites. However, I brought the Tropic-sicles to a poolside gathering and they disappeared in about 2.2 seconds. I am excited to try out some more boozy pop recipe ideas!

What are your favorite summertime treats?
