“Last Resort” Meals

Everyone is BUSY. We don’t always have time to put together an amazing new recipe every night of the week. But that doesn’t mean you should add the pizza joint to your speed dial. By keeping a few simple, “last resort” items in your fridge/freezer, you can throw together a healthy dinner in no time flat.

We’re lucky. My stepdad is an avid hunter, so we almost always have maple venison sausage in our chest freezer just waiting to be eaten (thank you, Kelly!). Plus, we feed our dog a raw diet so there are always eggs in the fridge. This means that even if we’re way past due for a grocery run, this balanced dinner can be thrown together nearly any day of the week. It’s not just for breakfast anymore, people.

There’s really no need for a recipe here, as I think we all know how to cook eggs. We just boil up the sausage and scrambled the eggs with some hot sauce – Add in some spinach and red, yellow, and orange peppers – and you’ve got yourself a colorful, tasty meal! Done in about 10 minutes.
